Garlic peels cling stubbornly to intact cloves, but slip off easily once the clove has been crushed. After working with garlic, rub your fingers on a stainless steel spoon (or your sink’s steel faucet) to get rid of the smell.

Separate individual cloves from the garlic head.

Cut away the flat “stem” end of the clove.
3.
Using the flat side of a large chef’s knife, crush the clove to break the membranes that hold the peel in place.
4. . Slip the loosened peel off with your fingers.
