Roasted garlic makes a wonderful addition to sauces, salad dressings, soups and other dishes. But one of the very best ways to enjoy it is simply spread on crackers or good bread!
1.Preheat the oven to 350 degrees.
Remove excess papery skin from the garlic head, but do not completely peel it.
2. Cut away the pointy end of the garlic head to expose most of the cloves.

Place the head cut-side-up in a small baking dish and drizzle with olive oil. (Sprinkle with salt, pepper, or dried herbs if you like, but this is not necessary.)

Cover with foil and roast until the flesh of the garlic is very soft. This will take about an hour, but it’s hard to overdo; as long as it’s covered to prevent burning, there is no harm in leaving the garlic in the oven for up to two hours.

When the garlic is cool enough to handle, squeeze the cloves to extract the flavorful roasted pulp.
