As with all knife skills, perfect slices begin with a good-quality, professionally sharpened chef’s knife.
1.
Place the item on a cutting board and hold it in place with your left (or non-slicing) hand.
2.
Curl your fingers under to hold the food securely while protecting your fingertips from cuts. Place the tip of your knife on the board, then slice down through the food with a smooth motion.
3. “Rock” the knife back up and slice again to the desired thickness.
4.
Repeat this rocking motion to create uniform slices. Your knife tip should remain in contact with the board at all times for safety and stability.
