Knife Skills—Chiffonade
Any leafy herb such as basil, oregano or mint can be easily cut into delicate ribbons using this simple technique.
1. Stack 3–4 leaves together.
2. Roll the leaves into a cylinder.
3. Support one end of the cylinder with your fingers and cut across to create the ribbons. Unravel the leaves and sprinkle over your dish.
