Prepare Asparagus

If you’re able to find pencil-slim, tender asparagus, you’ll delight in their easy preparation. Thicker asparagus sometimes have tough skins, and therefore require a bit more effort.
  Slender Stalks  
  1. Hold one end of the asparagus in each hand and bend.  
       
  2. The asparagus will naturally snap at the point where the stem becomes tough.  
       
  3. Discard the tougher lower ends.  
    Thicker Stalks  
  1. Using a vegetable peeler, peel away the outer skin on the lower portion of each stalk.  
       
  2. Hold the asparagus in two hands and “snap” as described above, discarding the tough lower ends.  
   

NOTE:

 
   

Special Occasions--Asparagus look particularly elegant when trimmed and peeled uniformly at the ends. This makes a lovely presentation for a special dish, but is certainly not necessary.
