Patate Fagioli
(Italian Green Beans and Potatoes with Pesto)



Pesto adds great flavor to this simple Italian vegetale dish. Steamed potatoes and green beans provides extra nutrition.

Refer to the recipe for precise ingredients.

     
  1. Steam or boil the potatoes until just tender. Cool slightly, then cut them in half.  
       
  2. Steam or boil the green beans until tender; cool slightly.  
       
  3. Combine the warm potatoes and beans in a spacious bowl.  
       
  4. Add the olive oil, pesto, and salt together in a small bowl. Spoon the pesto mixture to the potatoes and beans and toss well.  
       
 

5. Adjust the salt as needed and transfer to a serving bowl or platter.

Sprinkle the cheese and green onions over the top and serve.
