Sensuously fragrant and brilliantly colored, the oil-rich outer skins of lemons, limes, and oranges add great flavor to all your recipes. Zest citrus with a micro planer, zester, sharp knife or vegetable peeler.
1. Microplaner: Hold the microplaner at an angle and place the fruit on top. Move the fruit up and down, applying gentle pressure and rotating the fruit as you work. Be careful to remove the colored skin only, leaving the bitter white pith— and your fingers!— intact.
2. Zester: Remove the outer skin of the fruit in tiny strips with the zester. Grip the fruit with one hand and pull the zester over it in light fast strokes, being careful not to remove any of the bitter white pith.
3. Knife: Slice off the top or bottom end of the fruit. Set the fruit on its cut end, hold it securely with on hand, and use the other to cut away very thin strips of colored outer peel, working from top to bottom. Be careful to cut only the colorful zest, leaving the bitter, white pith intact.
4. Peeler: Grip the fruit in one hand and use the other to peel its thin outer skin. Remove any bitter white pith from your strips.
