Roast Beets

Roasting is a quick, easy method for preparing beets that brings out their full, earthy flavor. You can use a similar method for cooking carrots, parsnips, and other root vegetables.

     
  1. Trim away the tops, leaving an inch or so of stem in place.  
       
  2. Make a half-inch slice through the tough skin of each beet, which will allow steam to escape during cooking.  
       
  3. Place the beets, a few at a time, on sheets of foil.  
       
  4. Fold the foil to form sealed packets. and place on a baking sheet.  
       
  5. Test for doneness by lifting away the foil and piercing a beet with a wooden skewer. The beets should feel tender, with a texture similar to cooked potato.  
       
  6.When the beets are cool enough to handle, trim away the top and root ends.  
       
  7. Remove the peel with a small, sharp knife.
