Ingredients
12 jalapeño peppers, halved and seeded with ribs removed
~6 ounces cream cheese, room temperature*
12 dates, pitted and halved
12 bacon strips, halved and at room temperature

*The amount of cream cheese varies with the size of the peppers.

Directions

Preheat oven to 450°F.
Line a baking sheet with aluminum foil.
Have toothpicks ready for securing the bacon.

  1. Fill each jalapeño half with about ¼ ounce of cream cheese.
  2. Place half of date into the cream cheese.
  3. Starting at the top of the jalapeño, wrap the bacon strip around the pepper. Gently press the bacon into the pepper. Secure the bacon by inserting a toothpick through the center of the pepper. Repeat process until all jalapeños are filled.
  4. Place rolled poppers on the baking sheet, leaving room between them.
  5. Set baking sheet on the top rack of oven and cook for 18–20 minutes or until bacon is cooked and slightly crisp.
  6. Remove from the oven and let poppers cool for 10 minutes.
  7. Plate and serve.
