Tropical Drink Recipe

Check out party supply stores for tiny cocktail umbrellas; this drink just doesn’t feel right without one

Recommended glass: Collins

Ingredients
Serves 1
1 cup ice cubes
1 ounce light rum
1 ounce Blue Curacao
2 ounces pineapple juice *
1 ounce Cream of Coconut**
1   pineapple slice
1   maraschino cherry

* Use canned or bottled pineapple juice.

** Cream of Coconut is a drink mix found in liquor stores or the liquor section of your local supermarket.

 
 
Directions 
 

1. Chill the glass in the refrigerator, or fill it with ice for several minutes, then discard the ice.

2. Mix the ice, rum, Blue Curacao, pineapple juice, and Cream of Coconut in a blender and process on high speed until slushy.

3. Pour into the chilled glass, garnish with the fruit, and serve immediately.
