This is a perfect party dessert because it can be prepared hours—or even days—ahead. If you’re feeling truly decadent, pass whipped cream or additional chocolate sauce on the side.

Ingredients
Serves 8 slices
1 recipe Chocolate Cookie Crust
1 recipe Coffee Ice Cream or store bought
1 recipe Ganache or store bought chocolate fudge sauce
     
     
     
 
 
Directions 
 

1. Pre-make and cool the cookie crust.

2. Remove the ice cream from the refrigerator and soften it by letting it sit on the counter—or place it in the microwave for 20 seconds—until soft but not runny.

3. Place the softened ice cream into the prepared cookie crust and spread evenly.

4. Spread the chocolate sauce evenly over the top of the pie.

5. Loosely cover with plastic wrap and set onto a flat surface in the freezer for 4–6 hours, or until firmly set.

6. Remove 20 minutes before serving for best flavor.

 

 

Preparation time: 10 minutes with pre-made crust plus 4 1/2-6 1/2 hours downtime.
