Vanilla Wafer-Almond Crust

Finely chopped almonds add richer flavor and extra crunch to this classic cookie crust.

Ingredients
Serves 1 9-inch crust
1 cup vanilla wafers
1 cup blanched almonds
1/4 cup melted butter
     
     
     
 
 
Directions 
 

Pre-heat oven to 350°

1. Using a food processor, crush the wafers to a fine consistency with no visible chunks. (Alternatively, you can place them between two layers of waxed paper and crush them with a rolling pin.) Place the crumbs in a 9-inch, heat-resistant pie pan and set aside.

2. Process the almonds in the food processor or chop by hand. The almonds should be finely chopped, but can have more texture than the cookie crumbs. Add the almonds to the pie pan and mix.

3. Add the melted butter and mix until well combined.

4. Press the crust evenly over the bottom and up the sides of the pan.

5. Bake in a 350° oven for 10–12 minutes, until set.

6. Remove from the oven and cool completely before filling.

 

 

Preparation time: 20 minutes plus cooling time.
