This cooling condiment exists in many variations, some featuring vegetables such as cucumbers and tomatoes. The basic version offered here is a cinch to prepare and works wonderfully alongside any Indian snack or meal.
Ingredients
Serves 2 cups

cups
plain yogurt*
1/4
teaspoon
chili powder
1/2
teaspoon
ground cumin
3/4
teaspoon
salt
1/4
teaspoon
freshly ground black pepper
~
cilantro leaves for decoration
*Look for preservative-free yogurt, which has a milder, more mellow flavor.
Directions
1. Place the yogurt in a medium mixing bowl and whisk until creamy.
2. Add the chili powder, cumin, salt, and pepper, and mix well.
3. Place in a decorative serving bowl and sprinkle some chili powder in the center of the raita. Use a knife to spread the powder outward in an informal design.
4. Decorate with cilantro leaves before serving.
NOTE: Make the raita several hours before serving; let stand at room temperature to develop the flavors.
Preparation time: 5 minutes plus 2-3 hour downtime.
