California BLT Sandwich

Sharp red onion, avocado, and tangy cheddar take the classic BLT to a whole new level.

2 slices good quality bread
1+ tablespoon mayonnaise
1 large lettuce leaf
1 medium ripe tomato
1 slice red onion
3–4 slices ripe avocado
3 slices cheddar cheese
3 slices thick-cut bacon, cooked crisp

1. Toast the bread and slather both slices with mayonnaise.

2. Arrange the lettuce, tomato, onion, avocado, cheddar and bacon between the bread to form a sandwich.

3. Slice in half and serve.
