Grilled Sausage Sandwich

This is a firehouse favorite invented by my son, Ian, a firefighter with the Southern Marin Fire Department. You can make the sandwich mild or five-alarm hot, depending on what type of sausage you prefer.

Ingredients
Serves 1
1 tablespoon olive oil
1 tablespoon butter
1/2 medium

red onion, sliced

1   sausage
1   hard French or sour dough roll, split
~   honey mustard
~   coleslaw, drained
~   salt
~   freshly ground black pepper
 
 
Directions 
 
  1. Place the olive oil and butter in a heavy-bottomed skillet set over medium-high and heat until it sizzles.
  2. Add the sliced onions, lower the heat a bit, and cook, stirring occasionally, until golden brown and translucent -- approximately 8 to 10 minutes.
  3. Turn off the heat and keep the onions warm in the skillet while you prepare the other ingredients.
  4. Split the sausage and grill or fry it for about two minutes on each side.
  5. Cut the roll in half lengthwise and grill or warm it.
  6. Slather with the honey mustard.
  7. Place the onions on the bottom roll and top with the sausage.
  8. Sprinkle with the salt and pepper and top with approximately ¼ cup of drained coleslaw.
  9. Top with the second half of the roll, gently press down, and serve immediately.

 

 

Preparation time: 10–12 minutes.
