Ham Salad Sandwich recipe  
Ham Salad
You can turn any ham into tasty ham salad, although my favorite is honeybaked ham left over from a holiday feast. Feel free to adjust the seasonings any way you like.

Ingredients
Serves 4+ cups
4 cups finely chopped ham *
1/2 medium onion, minced
1 tablespoon bell pepper, chopped
2 tablespoons canned or jarred chopped pimentos, drained
1 tablespoon Italian parsley, chopped
1/2 cup mayonnaise
1 tablespoon

Dijon mustard

 

1/2 teaspoon freshly ground black pepper
~   salt
*A whirl in the food processor accomplishes this quickly and easily.
 
 
Directions 
 
  1. Place the ham, onion, bell pepper, pimentos, Italian parsley, mayonnaise mustard, and pepper in a spacious bowl and mix well.
  2. Taste the salad and salt as needed.
  3. Cover the mixture with plastic wrap and refrigerate for several hours to allow the flavors to develop.

 

 

Preparation time: Ten minutes plus several hours downtime.
