Mango-Pineapple Salsa

This lush, spicy mixture is a perfect partner for simple grilled fish. Bring it to room temperature before serving to showcase every nuance of glorious fruit flavor.

Ingredients
Serves About 3 cups.
2   ripe mangos, diced
1 small fresh pineapple, cored, peeled, and diced
1/2 small red onion, minced
2   serrano chiles, minced
2 tablespoons freshly squeezed lime juice
1/2 teaspoon salt
1/3 cup chopped cilantro
 
 
Directions 
 
  1. Combine the mangos, pineapple, onion, chilies and lime juice in a spacious bowl.

  2. Cover with plastic wrap and refrigerate for 4–6 hours or overnight.

  3. Remove from the refrigerator and bring to room temperature.

  4. Add the salt and cilantro and mix well.

 

 

Preparation time: Under 15 minutes, plus 4–6 hours or overnight downtime.
