How do you spell delicious? Here’s a hint: it doesn’t involve a can opener. This homemade version of the childhood classic is popular with adults, too. Just trade the alphabet pasta for thin egg noodles… or not!

Ingredients
Serves 4–6
2 tablespoons butter
2 tablespoons olive oil
1 large onion, chopped
3 small potatoes, diced
2   carrots, peeled and cut in bite-sized pieces
2 ribs celery, cut in bite-sized pieces
2 tablespoons tomato paste
2   whole bay leaves
1/2 teaspoon freshly ground black pepper
6 cups chicken stock
1/2 cup alphabet pasta
3/4 teaspoon salt

Directions 
 
  1. Place a large, heavy-bottomed saucepan over medium heat and add the butter and olive oil.
  2. Add the onions and cook until caramelized and a translucent golden brown, adjusting the heat as necessary to prevent burning.
  3. Add the potatoes and carrots, adjust the heat, and cook for three minutes.
  4. Add the celery, tomato paste, bay leaves, pepper, and one-half cup of the chicken stock to prevent burning. Mix well and cook for five minutes or until the potatoes are almost soft.
  5. Add the remaining chicken stock and salt and bring to a lively simmer.
  6. Add the alphabet pasta and continue cooking until the vegetables and pasta are tender.

 

 

Preparation time: 30–35 minutes.
