How To Peel Chestnuts

I love the sweet, distinct flavor of fresh chestnuts and use them often when they are in season September through February. Always select plump, firm nuts that have not pulled away from their shells. One pound serves 3–4 people and they are easily stored in a cool, dry place until ready to shell.

     
  1. Treat yourself to a chestnut knife available at most kitchen supply stores, or select a sharp paring knife for removing the exterior and interior shells.  
       
  2. Cut an "X" on the flat side of each chestnut.  
       
 

3. Drop them in to a pot of water, bring it to a boil, and cook for 2-3 minutes.. Turn the heat to low and remove several nuts at a time using a slotted spoon.

  4. Insert your knife—or fingernail into the cut "X" and peel away the outer shell.  
       
  5. Use the knife and your fingers to peel away the inner shell. If you have problems removing it, return the nut to the hot water and loosen it.  
       
  NOTE: Some nuts may have imperfections—Cut them out. Always discard moldy nuts. If you get a batch with numerous bad nuts, put them in a bag and return them to the store for a refund.  
       
  6. A shelled nut looks much like a brain. Use them immediately or store the nuts covered in your refrigerator until ready to use.
