Peel and Segment Citrus Fruits

Add another layer of color and flavor to your salads and recipes with beautifully cut orange and grapefruit segments. I like this method for removing peel because it keeps the fruit on a flat, stable surface at all times, which reduces the risk of slipping and injury. It is also quicker than peeling slice-by-slice after the fruit has been cut. You may feel, at first, that you're losing a lot of fruit along with the peel, but once you become accustomed to the technique your results will improve.

     
       
  1. Working on a cutting board with a sharp paring knife, place the orange or grapefruit on its side and slice away each end to create two flat surfaces.  
       
 

2. Stand the fruit upright on one of the flat ends, creating a steady base for safe cutting. Hold the fruit with one hand and use the other to slice the peel away in vertical strips—Angle the knife nearly parallel as you work.

 
       
 

3. Hold the fruit over a bowl to catch all of its juice. Insert the knife between a white membranes and fruit segment. Carefully move the knife down to separate the segment. Repeat the process on the other side of the segment, lift it out, and place it in a bowl. Continue until all that remains are the empty white membranes.

 

 
       
 

4. Remove all the juice from the empty white membranes by squeezing them over the bowl of orange or grapefruit segments.
