Royal Icing

Traditionally made from whipped egg whites, royal icing is a snap to prepare using purchased meringue powder. It’s ideal for piping delicate decorations since it dries quickly to a hard finish.

Ingredients

4 cups confectioner’s sugar, sifted
4 tablespoons meringue powder
2 teaspoons vanilla extract
(clear vanilla extract yields
pure white frosting)
3–4 tablespoons warm water
Find clear vanilla and meringue powder at local or online cake baking supply stores.
Directions

1. In a medium bowl combine confectioner’s sugar and meringue powder.

2. Turn on mixer and add vanilla.

3. Slowly add warm water until the mixture reaches a pourable consistency. The frosting will dry quickly and become solid once it has been applied.

4. Keep frosting covered while you are working to prevent it from hardening up too quickly. Royal icing can be frozen.
