Mexican Prickly Pear Water

“Tuna water, yuk!” It’s a natural reaction, but don’t let the name frighten you. “Tuna” is actually the Spanish word for the flavorful fruit of the prickly pear cactus, typically available in September and October.

Ingredients
1 1/2 pounds prickly pears, spines removed and peeled*
~1 cup sugar
8 cups water

*Prickly pear range in color from pale green to reddish-purple and produce different aguas.

Directions

1. Combine the peeled prickly pears, sugar and 2 cups of water in a blender and liquefy.

2. Pour the mixture through a mesh strainer and discard the pulp and seeds.

3. Add the remaining water to the fruit mixture and adjust the sugar to suit your taste.

4. Chill for several hours.

Preparation Time: 
approximately 15 minutes plus chilling time.
