Homemade Mayonnaise

Ingredients

2 egg yolks*
1 teaspoon Dijon mustard
2 teaspoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup oil**
* Uncooked egg yolks may carry the risk of salmonella.
** Use mild olive oil, corn, or peanut oil. 
Directions
  1. Whisk the egg yolks, mustard, vinegar, salt and pepper together in a bowl.
  2. Whisking constantly, pour in the oil in a thin, steady stream, creating a thick emulsion. Adjust the salt and pepper to your tast.
  3. Serve immediately or store in the refrigerator.
