This is one of my favorite ways to enjoy blueberries. The topping is fairly light, so the true blueberry flavor really takes center stage.
Topping | ||
2/3 | cup | flour |
1/2 | cup | brown sugar |
1/2 | teaspoon | ground cinnamon |
1/2 | orange, zested | |
1/2 | cup | butter, melted |
Crumble | ||
4 | cups | blueberries |
1 | cup | sugar |
3 | tablespoons | corn starch |
1 | orange, zested | |
2 | tablespoons | Grand Marnier |
Preheat oven to 375°
Topping
1. Place the flour, sugar, cinnamon, orange zest together in a spacious mixing bowl.
2. Add the melted butter and use your fingers to toss and pinch the ingredients together, forming a coarse, crumbly mixture.
Fruit
1. Combine the blueberries, sugar, and cornstarch in a medium, heavy-bottom saucepan over medium-high heat and cook, stirring, until it begins to simmer. Adjust the heat to a low simmer and continue to cook, stirring constantly, until the liquid thickens and the berries soften.
2. Add the orange zest and Grand Maniere and stir well.
3. Remove from the heat and pour into a 6 ½ x 9 ½-inch baking dish.
4. Sprinkle the topping over the blueberries and place in the pre-heated oven for 15 to 20 minutes, until the topping sets and turns golden.
5. Remove from the oven and let sit for 10 minutes.
6. Serve warm with good-quality vanilla ice cream or whipped cream.
