
Because you can make both the crepes and the filling a day ahead, this “fancy” dessert is deliciously stress-free. Use the best ripe berries you can find—fresh from the farmer’s market is ideal.



1 | cup | water |
3/4 | cup | sugar |
1 | tablespoon | freshly squeezed lemon juice |
4 | cups | sliced strawberries |
1 | recipe | basic dessert crêpes |
~ | whipped cream | |
~ | fresh mint sprigs for decoration. |
- Combine the water, sugar and lemon juice in a spacious bowl.
- Add the strawberries and toss to coat.
- Cover with plastic and place in the refrigerator to macerate for 6–8 hours or overnight.
- When ready to assemble, fill each crêpe with a dollop of whipped cream and a small amount of fruit; fold into thirds.
- Place on individual dessert plates and top with more cream and berries.
- Garnish with mint and serve immediately.
