Cilantro Slaw with Lime Dressing

This slaw adds a tangy garnish that can perk up just about any meal. Try it on pulled pork sandwiches, sliders and fish tacos!

Serves Approximately 4 cups of slaw
Ingredients

 

Cilantro Slaw
1 head green cabbage, thinly sliced into bite-sized pieces
1/2 bunch cilantro leaves and tender young stems, roughly chopped*
Lime Dressing
1/3  cup freshly squeezed lime juice**
1/3 cup vegetable oil
2 tablespoons honey
1/2 teaspoon crushed garlic
1 whole jalapeño pepper, seeds and ribs removed; finely chopped
1 teaspoon salt

*Use the leaves and tender stems, not the thicker stems.

**Juice for this dressing must be freshly squeezed—do not substitute with bottled.

Directions
  1.  Combine the cabbage and cilantro in a large bowl. Set aside.
  2. Whisk the lime juice, oil, honey, garlic, jalapeño pepper and salt together until well combined.
  3. Pour the dressing over the cabbage and toss well.
  4. Serve.
