
How do you spell delicious? Here’s a hint: it doesn’t involve a can opener. This homemade version of the childhood classic is popular with adults, too. Just trade the alphabet pasta for thin egg noodles… or not!

2 | tablespoons | olive oil |
1 | large | onion, chopped |
3 | small | potatoes, diced |
2 | carrots, peeled and cut in bite-sized pieces | |
2 | ribs | celery, cut in bite-sized pieces |
2 | tablespoons | tomato paste |
2 | whole bay leaves | |
1/2 | teaspoon | freshly ground black pepper |
6 | cups | chicken stock |
1/2 | cup | alphabet pasta |
3/4 | teaspoon | salt |

- Place a large, heavy-bottomed saucepan over medium heat and add the butter and olive oil.
- Add the onions and cook until caramelized and a translucent golden brown, adjusting the heat as necessary to prevent burning.
- Add the potatoes and carrots, adjust the heat, and cook for three minutes.
- Add the celery, tomato paste, bay leaves, pepper, and one-half cup of the chicken stock to prevent burning. Mix well and cook for five minutes or until the potatoes are almost soft.
- Add the remaining chicken stock and salt and bring to a lively simmer.
- Add the alphabet pasta and continue cooking until the vegetables and pasta are tender.
