Classic Pancakes with
Honey Plum Compote

A quintessential morning delight, these simple pancakes will send the kind from a mix scurrying away in shame!

Ingredients
Serves About 15 pancakes
1 recipe Honey Plum Compote
1 cup unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 cup milk
3 tablespoons unsalted butter, melted and cooled*
1   large egg, slightly beaten
~   butter for frying
 
 
Directions 
 
  1. In a large bowl, sift together the flour, baking powder, salt and sugar.

  2. Make a well in the center and add the milk, butter and egg. Whisk just until combined. A few lumps are okay.

  3. Grease and preheat the griddle or frying pan to medium high and ladle out batter to desired size.

  4. Cook until bubbles begin to form around the edges. Flip and brown the other side.

  5. Store on a plate in a warm oven until ready to serve.

  6. Serve with plum honey compote or butter and real maple syrup.

 

Preparation time: 15 minutes prep time plus 2–5 minutes per pancake.
