Shrimp in Chipolte Cream Sauce

Sautéd shrimp in a spicy cream coating makes for an irresistibly easy dinner. Pair with rice, guacamole and warm tortillas to sop up every bit of excess sauce. And, of course, a margarita is the perfect finishing touch.

Ingredients

 

Chipotle Sauce
1 whole chipotle chili*
1 tablespoon adobo sauce*
1 cup heavy cream, room temperature
1/2 teaspoon salt
Shrimp
1  pound thawed shrimp (about 20-25), shelled and deveined**
2 tablespoons butter
2 tablespoons olive oil
~ limes for spritzing
1/2 teaspoon garlic, finely minced
1/4 cup tequila
~ chopped cilantro, for decoration
~ limes, cut in eights for decoration and spritzing

*Canned chipotle chilies in adobo sauce are sold in supermarkets and Mexican markets.

Directions

Chipotle Sauce

  1. Place the chipotle chili, adobo sauce, heavy cream and salt in blender. Process until smooth.
  2. Set aside for later use.

Shrimp

Have a heat-resistant bowl ready for holding the shrimp in step 4.

  1. Pat the shrimp with a paper towel to remove any excess moisture.
  2. Heat the butter and oil in a large, heavy-bottomed skillet over medium-high heat until it sizzles.
  3. Working in batches, add half of the shrimp to the skillet and sauté until pink. Spritz with lime juice.
  4. Turn the shrimp over, spritz with lime juice and cook until the other side is pink. Remove and place in a heat-resistant bowl.
  5. Return skillet to heat. Add the garlic and cook for 10–15 seconds, adjusting heat to prevent burning. Remove garlic and place in heat-resistant shrimp bowl.
  6. Sauté the remaining shrimp. Add to the first batch and toss to coat evenly with bits of garlic.
  7. Remove skillet from heat and pour in tequila. Bring skillet back to heat and scrape all the bits of garlic and shrimp into the tequila. Cook for 1 minute.
  8. Whisk in the chipotle cream and cook until hot. Add the shrimp and cook until heated through.
  9. Plate the shrimp and sprinkle with chopped cilantro.
  10. Add lime wedges and serve.
