Recipe

Honey and lime add a subtle boost of flavor to this salad, without overpowering the fruit’s natural character.

Ingredients

1 fresh, ripe pineapple, cubed*
4 oranges, segmented
2 kiwis, peeled and sliced**
3 bananas, sliced
1 pint strawberries, slices
2 tablespoons clover honey
2 tablespoons freshly squeezed lime juice
*Substitute canned pineapple chunks if the fresh fruit is unavailable.**I like to break-up the colors with green fruit. If kiwi’s are unavailable, try green grapes cut in half.

Directions
  1. Combine the pineapple, oranges, kiwis, bananas, and strawberries in a spacious bowl. Be sure to include all of the juice from the pineapple and oranges.
  2. Whisk together the honey and lime juice in a small bowl. Pour the mixture over the fruit and mix well.
  3. Cover and refrigerate for several hours so that the flavors meld. Remove the tropical salad from the fridge 20 minutes before serving for best flavor.
  4. Immediately before serving, stir to distribute the juices.
Preparation Time:
15 minutes plus several hours downtime.
