This cooling condiment exists in many variations, some featuring vegetables such as cucumbers and tomatoes. The basic version offered here is a cinch to prepare and works wonderfully alongside any Indian snack or meal.
2 | cups | plain yogurt* |
1/4 | teaspoon | chili powder |
1/2 | teaspoon | ground cumin |
3/4 | teaspoon | salt |
1/4 | teaspoon | freshly ground black pepper |
~ | cilantro leaves for decoration |
*Look for preservative-free yogurt, which has a milder, more mellow flavor. |
1. Place the yogurt in a medium mixing bowl and whisk until creamy.
2. Add the chili powder, cumin, salt, and pepper, and mix well.
3. Place in a decorative serving bowl and sprinkle some chili powder in the center of the raita. Use a knife to spread the powder outward in an informal design.
4. Decorate with cilantro leaves before serving.
NOTE: Make the raita several hours before serving; let stand at room temperature to develop the flavors.
