Portabella Mushroom Sandwich Recipe

Delicious doesn’t get much simpler than this! If you must embellish, try a few crumbles of goat cheese or a juicy slice of garden-ripe tomato.

Ingredients
Serves 2 sandwiches
2  

portobello mushrooms, stems removed

~   olive oil
~   salt
~   freshly ground black pepper
4   slices French bread
~   roasted garlic aioli
5–6   fresh basil leaves, chiffonade cut
 
 
Directions 
 

Preheat grill or a heavy-bottomed skillet.

  1. Rub the mushrooms with a bit of oil and sprinkle with salt and pepper.

  2. Grill the mushrooms on one side for approximately 3 minutes. Flip over and continue grilling until softened—approximately 2–3 minutes. Set aside.

  3. Lightly grill the bread.

  4. Slather the bread with garlic aioli.

  5. Sandwich the grilled mushrooms and basil between two slices of grilled bread and serve.

 
Preparation time: Under 10 minutes with prepared roasted garlic aioli.
