Roasted Asparagus with
Parmesan Cheese

When you’re lucky enough to find tender, sweet asparagus at the market, they require very little in the way of preparation. Scrumptious sides don’t get much easier than this!

Ingredients

1 pound asparagus
~ olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Substitue Asiago or Romano cheese if Parmesan is unavailable.
Directions

Preheat oven to 400°

  1. Prepare the asparagus by removing the tough lower stalks. (For detailed instructions see How To Prepare Asparagus.)
  2. Place the asparagus in a large bowl, pour olive oil over, and toss to coat.
  3. Sprinkle with salt and pepper and toss again.
  4. Arrange on a baking sheet and roast for 15–20 minutes or until tender.
  5. Remove the asparagus from the oven, arrange on a serving platter, and sprinkle the Parmesan cheese over the top.
