
It’s hard to say which is more delicious—the flavor of mulled cider or its scent. Start with good-quality fresh apple cider, ideally from a nearby farm.

1. Place the apple cider, sugar, cinnamon sticks, cloves, allspice, orange and lemon slices in a heavy-bottomed pan set over medium high heat.
2.Bring to a lively simmer, then reduce the heat to low and let the flavors develop for 10 minutes.
3. Ladle the mulled cider into heat-resistant mugs, taking care to leave the whole spices behind.
