This quick, easy and unusual recipe has been trusted by three generations of bakers. The trick is to handle the dough as little as possible to avoid toughening the crust.
3/4 | cup | cold butter |
6 | tablespoons | boiling water |
2 | cups | flour |
1/8 | teaspoon | salt |
1. Cut butter into small cubes and place in medium bowl.
2. Pour boiling water over butter and stir until butter softens but is not melted.
3. Add flour and gently combine, handling as little as possible.
4. Divide the dough in half. Generously dust a clean, dry surface with flour and roll dough out with a rolling pin until you have a circle about four inches wider in diameter than the pie pan.
5. Press crust firmly into pie pan and fill.
6.Repeat rolling process with top crust.
