Sautéd shrimp in a spicy cream coating makes for an irresistibly easy dinner. Pair with rice, guacamole and warm tortillas to sop up every bit of excess sauce. And, of course, a margarita is the perfect finishing touch.

Chipotle Sauce
- Place the chipotle chili, adobo sauce, heavy cream and salt in blender. Process until smooth.
- Set aside for later use.
Shrimp
Have a heat-resistant bowl ready for holding the shrimp in step 4.
- Pat the shrimp with a paper towel to remove any excess moisture.
- Heat the butter and oil in a large, heavy-bottomed skillet over medium-high heat until it sizzles.
- Working in batches, add half of the shrimp to the skillet and sauté until pink. Spritz with lime juice.
- Turn the shrimp over, spritz with lime juice and cook until the other side is pink. Remove and place in a heat-resistant bowl.
- Return skillet to heat. Add the garlic and cook for 10–15 seconds, adjusting heat to prevent burning. Remove garlic and place in heat-resistant shrimp bowl.
- Sauté the remaining shrimp. Add to the first batch and toss to coat evenly with bits of garlic.
- Remove skillet from heat and pour in tequila. Bring skillet back to heat and scrape all the bits of garlic and shrimp into the tequila. Cook for 1 minute.
- Whisk in the chipotle cream and cook until hot. Add the shrimp and cook until heated through.
- Plate the shrimp and sprinkle with chopped cilantro.
- Add lime wedges and serve.
