Cobb Salad Sandwich

Inspired by the Cobb Salad, this hearty sandwich definitely qualifies as a meal.

2 slices potato bread*
2 tablespoons mayonnaise
1 large leaf lettuce
2–3 slices tomato
1 slice red onion
3–4 slices avocado
2–3 ounces crumbled blue cheese
4 ounces deli turkey, sliced thinly
2 slices crisp bacon
*This is lovely bread available in most supermarkets.
  1. Slather both slices of bread with mayonnaise.
  2. Arrange the lettuce, tomato, onion, avocado, blue cheese, turkey and bacon between the bread to form a sandwich.
  3. Slice in half and serve.
Preparation Time: 
Several minutes with pre-cooked bacon.
