
When you’re lucky enough to find tender, sweet asparagus at the market, they require very little in the way of preparation. Scrumptious sides don’t get much easier than this!



1 | pound | asparagus |
~ | olive oil | |
1 | teaspoon | kosher salt |
1/2 | teaspoon | freshly ground black pepper |
1/2 | cup | freshly grated Parmesan cheese |
Substitue Asiago or Romano cheese if Parmesan is unavailable. |
Preheat oven to 400°
- Prepare the asparagus by removing the tough lower stalks. (For detailed instructions see How To Prepare Asparagus.)
- Place the asparagus in a large bowl, pour olive oil over, and toss to coat.
- Sprinkle with salt and pepper and toss again.
- Arrange on a baking sheet and roast for 15–20 minutes or until tender.
- Remove the asparagus from the oven, arrange on a serving platter, and sprinkle the Parmesan cheese over the top.
