This basic syrup has dozens of uses, from moistening cakes to sweetening mixed drinks. It’s also a key ingredient in fresh fruit sorbet.

1. Pour the sugar into a small saucepan.
2. Add the water and stir.
3. Bring the mixture to a boil, then reduce the heat and cook for a minute or two, stirring constantly, until the sugar dissolves.
4. Allow the simple syrup to cool to room temperature undisturbed.
5. Pour the syrup into a clean container and refrigerate. It will keep indefinitely if you are careful to use clean utensils when working with it.
