Strawberry Balsamic
Yogurt Pops

These may sound crazy weird, but they are crazy good.

Ingredients
Serves 8 5-ounce pops
3 cups sliced strawberries
1/4 cup sugar
2 tablespoons honey
1–2 tablespoons good quality balsamic vinegar
2 cups Greek-style yogurt
1 tablespoon finely chopped basil
1/8 teaspoon black pepper
8 5-ounce

disposable paper cups and wooden sticks, or your favorite  freezer pop molds

 
 
Directions 
 
  1. In a bowl, combine 2 cups of the strawberries with the sugar, honey and vinegar. Allow to stand, covered, for a minimum of 15 minutes.

  2. Place the strawberry mixture into a blender and pulse until smooth. 

  3. Add the yogurt and pulse until combined.

  4. Transfer the mixture to a bowl and stir in the remaining 1 cup of strawberries and the basil.

  5. Pour into molds or cups.

  6. Cover with foil and push the sticks through the foil into center of each pop.

  7. Freeze until firm, 8 hours or overnight.

 

 
Preparation time: Approximately 10 minutes plus 9–11 hours downtime.
