While a mojito is traditionally made with lime juice, a fresh Meyer lemon is a great way to mix things up. Citrus gives the perfect fresh bite to this light cocktail, and will instantly brighten your day.
8 | mint sprigs, plus additional for garnish | |
1 | tablespoon | simple syrup* |
3 | tablespoons | freshly squeezed Meyer lemon juice** |
2 | ounces | light rum |
1 | ounce | club soda |
~ | ice cubes | |
~ | lemon slice, for garnish | |
*If simple syrup is unavailable, substitute with superfine sugar.
**Meyer lemons range greatly in flavor. If your Meyer lemon is too sweet, simply perk things up with the juice of a regular lemon instead.
- Place the mint, simple syrup and Meyer lemon juice in a highball or Collins glass.
- Muddle the mint leaves until bruised and a mint scent fills the glass.Note: Be gentle, as you are releasing the essential oils into the drink and not shredding the leaves.
- Add the rum and sir well. (If using superfine sugar, mix until dissolved.)
- Add the ice cubes and top with a splash of club soda. Give a quick stir to mix.
- Garnish with a lemon slice and mint sprig.
- Serve immediately.
