
Only sweet, ripe melons will do for this brilliantly colorful condiment. If good melons can’t be found, try substituting peaches, mango or even pineapple.



1/2 | red onion, chopped | |
1/2 | cup | freshly squeezed lime juice |
2 | cups | chopped ripe cantaloupe |
1 | serrano chile, seeded and minced | |
1/2 | teaspoon | salt |
1/4 | teaspoon | freshly ground black pepper |
1/4 | cup | chopped cilantro |
- Place the onions in a glass bowl and pour the lime juice over them. Mix well and allow to sit for 3 hours, stirring the mixture several times during the marinating process.
- Drain and discard the lime juice.
- Mix together the cantaloupe, marinated onion, chile, salt, pepper and cilantro.
- Adjust the seasonings to your taste.
