Roll up your sleeves and tuck in your napkin—this burger is for serious eaters only. Save your fancy blue cheese for hors d’oeuvres; inexpensive ready-made “crumbles” are perfect in this recipe.
1 | can | chili with beans |
2 | hamburger buns | |
2/3 | pound | ground chuck |
1 | 7-ounce can | whole roasted green chilies* |
6 | slices | blue cheese, crumbled |
1/2 | medium | red onion, diced |

1. Heat the chili and set aside.
2. Warm the buns.
3. Shape the meat into two hamburger patties (handle the meat gently – do not knead or squeeze it), and grill to desired doneness.
4. To assemble each chiliburger, place the bottom of a bun on a dinner plate and top with half of the chili. Place a hamburger patty in the center of the chili and top with half of the green chilies, blue cheese, and onion.
5. Complete the sandwich by adding the top bun and serve immediately.
