If you’re lucky enough to get good chorizo, this is one of the best ways to enjoy it. While you’re at the market, pick up some authentic fresh tortillas, too. Delicious!
1 | pound | chorizo sausage* |
~ | limes, quartered | |
4 | corn tortillas | |
~ | onions, chopped | |
~ | cilantro | |
~ | favorite salsa such as salsa picante roja or verde, or salsa de aguacate | |
*Find chorizo sausages in Hispanic or other specialty markets. |
- Remove the casings from the sausage and crumble the meat.
- Heat a heavy-bottomed skillet over medium-high heat and brown the meat for approximately 5–6 minutes. Adjust the heat as needed to prevent burning.
- Drain any excess fat from the sausage.
- Sprinkle the meat with lime juice and toss. Remove from the pan and set aside.
- Using the same pan, lower the heat to medium-low and briefly warm the tortillas to soften them.
- Fill the tortillas with the sausage, onions, cilantro and salsa. Add extra lime juice if you like.
