Chorizo Tacos Authentic Mexican Recipe

If you’re lucky enough to get good chorizo, this is one of the best ways to enjoy it. While you’re at the market, pick up some authentic fresh tortillas, too. Delicious!

Ingredients

1 pound chorizo sausage*
~ limes, quartered
4 corn tortillas
~ onions, chopped
~ cilantro
~ favorite salsa such as salsa picante roja or verde, or salsa de aguacate
*Find chorizo sausages in Hispanic or other specialty markets.
Directions
  1. Remove the casings from the sausage and crumble the meat.
  2. Heat a heavy-bottomed skillet over medium-high heat and brown the meat for approximately 5–6 minutes. Adjust the heat as needed to prevent burning.
  3. Drain any excess fat from the sausage.
  4. Sprinkle the meat with lime juice and toss. Remove from the pan and set aside.
  5. Using the same pan, lower the heat to medium-low and briefly warm the tortillas to soften them.
  6. Fill the tortillas with the sausage, onions, cilantro and salsa. Add extra lime juice if you like.
