You can turn any ham into tasty ham salad, although my favorite is honeybaked ham left over from a holiday feast. Feel free to adjust the seasonings any way you like.
4 | cups | finely chopped ham * |
1/2 | medium | onion, minced |
1 | tablespoon | bell pepper, chopped |
2 | tablespoons | canned or jarred chopped pimentos, drained |
1 | tablespoon | Italian parsley, chopped |
1/2 | cup | mayonnaise |
1 | tablespoon | Dijon mustard |
1/2 | teaspoon | freshly ground black pepper |
~ | salt |
*A whirl in the food processor accomplishes this quickly and easily. |
- Place the ham, onion, bell pepper, pimentos, Italian parsley, mayonnaise mustard, and pepper in a spacious bowl and mix well.
- Taste the salad and salt as needed.
- Cover the mixture with plastic wrap and refrigerate for several hours to allow the flavors to develop.
