Huevos Mexicana Authentic Mexican Recipe
Over the years I’ve eaten this dish hundreds of times at the Shoreline Coffee Shop in Mill Valley—my favorite spot for neighborhood news and terrific Mexican breakfast fare.

fresh salsa pico de gallo, dained |

refried beans, heated |

Monterey Jack cheese, shredded |

warm corn tortillas |
Directions

- Heat the oil in a skillet set over a medium-high flame until sizzling.
- Saute the salsa pico de gallo until slightly softened—approximately one minute.
- Add the eggs to the salsa and mix well. Cook to your preference.
- Serve immediately with beans, cheese and warm corn tortillas.
