Classic Oatmeal Cookies

Subtly spiced oatmeal goodness studded with plump raisins. The secret is soaking the raisins to keep them extra moist and chewy.

Ingredients

3 eggs, well beaten
1 cup raisins
2 teaspoons vanilla extract
1 cup butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon soda
2 cups oatmeal
 
Directions
  1. In a small bowl, combine the eggs, raisins and vanilla together and let stand for one hour, covered with plastic wrap.
  2. Preheat the oven to 375 degrees.
  3. In the bowl of a stand mixer, cream the butter and sugars together.
  4. Add the flour, salt, cinnamon and soda and mix well.
  5. Blend in the egg-raisin mixture and oatmeal, mixing well.
  6. Drop by rounded tablespoons onto an ungreased cookie sheet.
  7. Bake for 10 minutes until just lightly brown.
  8. Transfer to racks to cool.

30 minutes (plus 1 hour to soak raisins)
Baking Time: 12 minutes
