Butter Lettuce and Herbs
with Mustard Dressing

The character of this simple, elegant salad will change dramatically depending on the assortment of herbs you select. Experiment with sweet notes like basil and tarragon, or sharper flavors such as cilantro and chives.

1 head butter lettuce
1/4 cup Italian parsley, leaves only
1/4 cup assorted fresh herbs, leaves only**
1 recipe Mustard Dressing
* While unusual, uncooked egg yolks may carry the risk of salmonella. If salmonella is a concern in your area, pasteurized eggs (available in many supermarkets) may be substituted without affecting the recipe’s outcome.** Use herbs like basil, chervil, cilantro, chives, or tarragon.

1. Tear the lettuce into bite-sized pieces and place in a salad bowl.

2. Add the parsley and other herbs and toss to combine.

3. Dress the salad with mustard vinaigrette and serve immediately.
