Lettuce with Artichokes, Mushrooms
and Blue Cheese Salad

With its simple, assertive flavors, this salad makes a great prelude to hearty fare like steaks or a roast. You might try shaved Parmesan as an alternative to the blue cheese.

1 head lettuce, red or Romaine
1 cup marinated artichokes, drained
1/2 medium red onion, sliced and separated
6–8 mushrooms, sliced
4 ounces blue cheese, crumbled.
1 recipe Italian Dressing

1. Tear the greens in to bite-sized pieces and place them in a salad bowl.

2. Add the artichokes, onions, mushrooms, and blue cheese.

3. Pour on the dressing and toss gently to coat.

4. Serve immediately.
